Idaho potatoes, (they are starchier than other varieties)
2 tsps olive oil
1 tsp butter
Sea salt to taste
1.) Peel and grate in a food processor, like hash browns.
2.) In the bottom of the Microhearth drizzle about 2 tsps of olive oil and a pat of butter, sprinkle sea salt over it, and if you want additional seasonings to go with the rest of your dinner, i.e. chives or cumin (for Mexican).
3.) Place Microhearth in microwave for approx. 2 min., to melt butter and bring oil temp. up.
4.) Remove lid and press the shredded potatoes down into the bottom of the pan in handfuls gently squeezing out any excess moisture created from the food processor first, place back in the microwave for approx. 3 to 4 min, you want the bottom to crisp up and turn golden brown.
5.) Place a plate on top of the Microhearth and invert to remove the potato cake, slide back into the pan and brown the other side for another 2 minutes.
6.) Slice into wedges like a pizza and serve with shredded cheese, chili sauce and a dollop of sour cream. Great with hamburgers, steak, hot dogs, chicken nuggets, kid friendly finger food.
