Lemon Drop Cupcakes
1 jiffy yellow cake mix
½ cup water
½ cup confectioner's sugar
Lemon pie filling
Make cake mix according to directions, spray muffin pan cups with butter spray or use cupcake liners if preferred, fill muffin pan cups about ¾ full, place a teaspoonful of lemon pie filling in the center.
Pour 1 cup of water in Microhearth, insert muffin pan and place in microwave for 12 minutes (900 watt) if stronger microwave reduce cooking time by 1 minute.
While cakes are baking, mix 2 tablespoons of lemon juice and ½ cup of confectioner sugar together for a glaze, thin if needed with more juice or water.
Optional topping: using a tea strainer, pour in confectioners sugar in strainer and rub sugar through strainer over the top of the cakes, they looked dusted and beautiful.
Recipe will make two batches.
